Happily Medicated

One of these days, I’m going to have something more exciting to report than “Oh…I spent the whole day in bed resting.” It might happen soon….perhaps sooner than you would think.

Actually, I know I will have moderately more exciting things to write about soon as Pete and I are scheduled to fly down to Baltimore today to see one of his college friends get married on Saturday evening. This has been planned for a while now, so I really didn’t want to cancel due to my mystery virus. I’m feeling better at the moment (although not fully recovered by any means!), so I figured as long as I keep myself happily medicated, things will be fiiiiiiiiine! The flight’s only an hour, so as long as I can survive that, I’ve got it made in the hotel-provided shade.

Anyway, back to yesterday. The day got off to a great start given the circumstances. My fever had broken (as I told you guys yesterday), and there was a nearly-empty nut butter container just waiting to be filled up with oats.

It was that time again. OATS IN A JAR time!!!!!

For those of you unfamiliar with Oats in a Jar, it is exactly what it sounds like. Instead of eating your oats from a bowl (like normal folks), you pour your cooked oats into a waning nut butter container. This allows you to enjoy a bit of nut butter in practically every bite, and it honestly makes for some of the most satisfying breakfasts I’ve ever had. Heavenly. If you haven’t had Oats in a Jar (OIAJ), you really must get to it. Chip away at the old nut butter jar, and sure enough…eventually, you will near the end of its contents, and then you can revel in the magic.

I used my beloved Justin’s as the oats vehicle.

All filled up.

It doesn’t look like much, but it tastes like heaven. I promise.

In today’s nut butter container:

  • 1/3 cup lite coconut milk, 2/3 cup water
  • 1/2 nanner
  • 1/3 cup Coach’s Oats
  • pinch salt, cinnamon

I kept the topping to a minimum today since I knew I would be getting more nut butter than I normally put in there. I would estimate I enjoyed 2-2.5T of nut butter remnants from the container. Heavenly.

My OIAJ kept me full for an inordinately long time. I wasn’t hungry for about 6 hours or so….

During that time, I did a lot of napping (this theme is getting old, I know. I’m bored of it too), and I read my latest issue of this magazine.

Only the greatest magazine that ever was, is, or will be. Good lord, I love Backpacker. I’m like a giddy three-year old whenever I pick up an issue and start paging through it. If any of you are interested in the outdoors in the slightest, you should check this magazine out. It is full of amazing tips, gear reviews, hiking route showcases, and survival stories. Above all, it contains some of the most beautiful outdoor pics I’ve ever seen. Mountain porn at its finest!

Moving on. Since my OIAJ held me over for so long, I decided to have a GM for a snack instead of having a full blown lunch.

In the GM mix:

  • mango + pineapple chunks
  • 3 handfuls spinach
  • scoop Mango Pomegranate Amazing Grass
  • 1/2 cup milk, 1/2 cup water
  • ice

It was light and refreshing, but I can honestly say that I didn’t enjoy the Amazing Grass Pomegranate Mango powder. It just doesn’t taste that good…it sounds like it would be amazing, but it just tastes kind of “grassy” and uninspired. Blech. I’m going to try to make it through the rest of the jar, but I will definitely try out the Vega Berry flavor next time instead of the Amazing Grass. Vega products are awesome!

For dinner last night, I actually felt like eating veggies and fish!!! I was hoping my normal taste preferences would resurface, and sure enough. They did. A sure sign that I’m starting to recover.

My plate.

  • Steamed broccoli tossed in sesame oil and sesame seeds
  • Leftover coconut curry brown rice
  • Salmon broiled in a Ginger Wasabi Teriyaki Marinade

This marinade is delicious, and the nutritional stats aren’t too bad either.

After I finished eating dinner, Pete arrived at my place where he showed up (like a knight in shining armor) with a mini air conditioner for my room!!!!

Swoon…..my hero…..(I know he’ll laugh when he reads this)

No really. It made such a huge difference in my room. Thanks Pete! He won major “good boyfriend points” with that gesture.

Alrighty guys, I just took a Dayquil and am feeling oh-so-fine (lol), and I need to finish getting ready for my Baltimore excursion. Till later bloggies…

Question: What’s your favorite way to cool off in the summertime?

I’m a fan of escaping into the mountains (dur)…and eating ice cream! Pools are also a wonderful thing.

    • I just broiled it for 7 minutes. It’s the easiest thing in the world. I love broiling. I would have marinated the filet for an hour or so if I had remembered to do so, but instead, I just put a spread a couple of blobs onto it before broiling and it worked pretty well. I heart salmon. 🙂 Tell Molly I say hello if you see her again!

  2. You won’t be too surprised to know that my favorite way to cool off is inside with an air conditioner, although being able to take a nap on a couch during a arm day with a nice cool constant breeze coming in the window comes a close second.

  3. My favorite way recently too cool off is for my son to dump water from his baby pool on me, preferably on my head (when it is 85+ outside).

    I was commenting this morning that my almond butter is almost done. You have convinced me to try OIAJ for the first time next week.

  4. I love to munch on ice cubes. And have shaved ice dessert, piled high with lots of shaved ice, sweetened red beans, mochi cubes, and sweetened condensed milk. 🙂

    I love that you shape your rice into a cone!

    • Wow. I need to try whatever concoction you’re describing. Sweetened red beans and mochi cubes? I have no idea what that would taste like, but it sounds AWESOME. Very cool.
