Coconut Salmon with Tropical Relish


  • 1 tsp coconut oil
  • Salmon filet
  • curry powder


  1. Brush 1tsp coconut oil and sprinkle curry powder onto each salmon fillet.
  2. Broil filet 1 min for each 0.1″ thickness (i.e. a 1″ thick filet would be broiled for 10 minutes). I broiled mine for 8 minutes.
  3. Top filet with tropical relish.

Tropical Relish


  • 1/2 cup mango, diced
  • 1/2 cup pineapple, diced
  • 1 avocado, diced
  • 1 T lemon juice
  • 1 roma tomato, chopped
  • 1/2 red onion, diced


  1. Mix ingredients in a bowl and serve atop salmon filets.
