Kidney Bean, Avocado, & Hummus Wrap

Ingredients:

  • 1 large whole grain tortilla
  • 1/2 cup rinsed and drained kidney beans
  • 1/4 diced tomato
  • 1/4 diced normal-sized avocado (or 1/2 diced small avocado)
  • 2T hummus
  • several shakes of oregano
  • feta or cheese of choice (optional)

Directions:

  1. Assemble kidney beans, avocado, tomato, and hummus on wrap.
  2. Garnish with oregano and feta.
  3. Wrap up in foil for an easy and healthy on-the-go lunch!

Serves one.
