5-minute Spicy Curried Salmon and Avocado Salad

Ingredients:

  • 1 can of wild salmon
  • 1/2 avocado, mashed
  • 1/3 cucumber. diced
  • 1/2 (or whole) bell pepper, diced
  • 1 heaping teaspoon curry
  • 1-2 T dijon mustard
  • a few shakes of cayenne pepper (more if you like it spicy like me!)

Take the above ingredients and mash together until the ingredients begin to stick.

Serve on a bed of lettuce or as part of a sandwich/wrap.

Feel free to add more (or different) vegetables in there. This recipe is so easy and so foolproof, I imagine that anything will work. Try: zuccini, celery, tomato, green beans, etc.

Serves two.
